Inspector notes: Observed cooked boba (85°F) sitting out at room temperature. Staff stated the boba had been cooked and placed on the counter 45 minutes prior to temperature measurement. The manager states they wish to use 4- hour time control on the boba to keep them the right consistency for drinks. A time control policy was written, and a sticker denoting discard time was added to the container. Discussed the importance of keeping time control documentation to ensure time control policies are followed
