According to the person in charge the establishment utilizes 4-hour time as a public health control for sushi rice. Time as a Public Health Control requires time-stamping for items actively held under Time as a Public Health Control. After discussion with the person in charge and reviewing the time stamp label it was determined the rice had been held at room temperature since early this morning (12 AM). Food that is unmarked or marked to exceed 4 hours must be discarded. Sushi rice was discarded at time of inspection. PIC provided documentation that sushi rice does not support pathogen growth (non-TCS). Discussed requirement to have lab tested products reviewed and approved by MCESD prior to implementation
