Inspector notes: Marinara sauce in hot holding unit found with internal temperature of 110-170*F. Only the outer most edges of the sauce nearest the container were at temperatures above 135*F while the center was at 110*F and the majority of the middle was below 135*F. PIC stated the sauce was heated through the pizza oven about 2 hours ago and then placed in the hot holding unit. The hot holding unit was set to 8/10 on its dial. While the sauce likely was above well above 135*F after coming out of the oven, it was unknown how long the sauce was below 135*F. PIC discarded the sauce and will monitor the next batch to make sure the unit is able to maintain the sauce at 135*F or above after the sauce has been properly heated through the oven. Please ensure hot held TCS food items are maintained at 135*F or above
