Inspector notes: Observed several deep, covered metal pans of shredded mozzarella cheese stacked in the walk-in cooler and the pizza make-line, with a date of 6/25 and internal temperature of 46-50F, probe thermometer, verified by PIC. According to PIC, the cheese was shredded from a block and began cooling the day prior to inspection. PIC discarded the cheese for failing to cool to 41F or below in 4 hours, see embargo form. PIC will retrain employees on proper cooling methods such as using shallow metal pans that are loosely covered and placed into the walk-in cooler/freezer on a speed rack or top shelf to facilitate airflow. Frequent stirring and vented pans also help to facilitate rapid cooling. TCS food that start the cooling process at 70F or less, has 4 hours to reach 41F or less
