Inspector notes: Observed recently prepped raw chicken breast stored above RTE cut vegetables. Observed raw shelled and pooled eggs stored above a bucket of cut cabbage and whole carrots and onions. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code

Inspector notes: Observed dried rice stored at room temperature. PIC stated the rice is used for sizzling soup and is prepared from steamed rice that is dehydrated in the toaster oven then finished drying at room temperature. Advised PIC this is a specialized process deviating from the Food Code that requires a variance. Advised PIC to purchase a commercially processed rice from an approved source, or to process rice and complete the drying process in the walk in cooler. Advised PIC standard 7 day date marking procedures should be applied to dried rice processed onsite. A variance/HACCP must be obtained prior to conducting any specialized processes.
