Inspector notes: Observed tomatillo and green salsa being cooled in large 5 gallon containers uncovered in walk in fridge. Salsa made 2/1 temped at 44*F and salsa made the day prior to inspection temped 50-64*F range. Staff stated peppers used for salsa are roasted or boiled, blended with other ingredients, cooled in an ice bath, then put in fridge. Reviewed taking temps of salsa when cooling and recommended obtaining ice pick with staff to ensure TCS foods gets properly cooled if using large containers. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than /4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means
