Inspector notes: -- Time as a Public Health Control (TPHC) documentation had a start time of 8:00 PM (ahead of actual time the TPHC started). The PIC stated the TPHC should be from 6:00 PM with a discard time of 10:00 PM (4 hours). All TCS foods being held under time as a control were properly time stamped at time of inspection.
