Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. PIC stated they will have someone cleaning these areas. Must clean physical facility prior to next routine inspection

Inspector notes: Observed the 3 bay in the bar test 0ppm of quat sanitizer. Machine did not dispense sanitizer automatically or accurately. PIC was able to switch the sanitizer out and replace the sanitizer solution in the 3 bay. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels

Inspector notes: Observed in hot-holding unit cooked mushrooms at 125°F, jus at 120°F and melted butter at 115°F. PIC stated all items had been in the unit for half an hour. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Discussed with PIC checking the water level in hot-holding units and keeping the water high enough to maintain food at 135°F or above
