Per person in charge both items were placed into water bath around opening (approximately 2 hours prior) at full temperature and then temperature is turned down for hot holding. Person in charge turned up temperature on steam wells to begin reheating both items. TCS shall have an internal temperature of 135'F or higher when hot holding
