Observed salsa in a tightly covered plastic container with more than 10 inches of cooling salsa inside the container. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All TCS foods improperly cooled were discarded by PIC at time of inspection

Inspector notes: Observed cooked broccoli in the steam table with internal temperatures ranging from 95-120*F when measured with a probe thermometer. Per cook, the broccoli was reheated in the oven 10 minutes prior in the oven but no reheating temperatures were taken. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection

Advised PIC to replace the faucet with a commercial spray head and spring or to adjust or install a counterweight to the hose line so that the spray head cannot be extended below the sink flood rim

Inspector notes: Observed floor drain located below the warewashing sink and dishwasher to have an accumulation of food debris in the grate used to catch the food debris, which is preventing the water to properly drain creating water to pull around the dish area and food prep area. The food debris was removed, and the water was observed to properly drain. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Discussed with person-in-charge (PIC) and employee cleaning dishes the importance of emptying the food debris caught in the drain to prevent large pooling of water
