Inspector notes: Observed concentration of chlorine sanitizer at the in use dishwasher in the kitchen test at 0ppm on the food contact surface with chlorine test strips after cycle. Chlorine sanitizer concentrations on the food contact surface shall be between 50ppm-100ppm. Upon examination, the sanitizer was empty and the PIC switched out and primed the sanitizer. Concentration of chlorine then tested 50ppm at the time of inspection with chlorine test strips. PIC was instructed to rewash all food-contact surfaces previously washed in dishwasher at the time of inspection
