Oregano's Pizza Bistro

Inspector notes: Observed facility using time control for cooked pizza slices. No documentation seen for pizzas stored at room temperature. Manager embargoed foods. Ensure that timestamp is placed for TCS foods stored at room temperature, and not kept out for more than 4 hours

Inspector notes: Observed pasta, marinara sauce, and cooked sausage stored in 6 inch containers with the lids on in the walk in refrigerator. The food items were holding 48-64F and were prepared two hours prior. PIC removed all of the lids and placed the products into sheet pants to cool faster. Also observed fresh mozzarella and feta cheese holding 48-51F in the top portion of the pizza refrigeration table. Employee stated that the cheeses were used to assemble lasagna within the last hour. The cheese was moved to the walk-in refrigerator to cool properly. TCS food items must be cooled back down to 41F before placing them in the top portion of the prep table, as it is designed to hold temperature, and not cool it down fast enough
