Inspector notes: Observed three compartment sink set up for dish washing, employee stated that they had just completed dishes ten minutes prior to our arrival. Tested chlorine levels with test strips provided by employee. Chlorine levels measured at 10ppm. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Instructed employee to remake sanitizing solution at proper concentration and re-sanitize the dishes
