Inspector notes: In the walk-in refrigerator observed a container of short rib jus/80°F and a tray of mashed potatoes/107°F. The containers were over 4 inches deep. In an ice bath near the baking area observed a large container of white pizza sauce/71°F. The container of white pizza sauce was over 12 inches deep and a small ice wand was observed in the product. After discussion with the PIC and reviewing the establishment’s cooling logs all TCS foods had been cooling for over two hours
