Provide chlorine sanitizer test strips prior to re-inspection. Also observed high-temperature dish machine in establishment. Per PIC, they have not used dish machine, and are not expecting to in the future. Discussed with PIC if they start to use dish machine, they must obtain a thermometer that measures ambient air/water temperature. Sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F
