Inspector notes: Gravy at 68°F that had been prepared 2hr previous, per person in charge (PIC), was cooling in a pan tightly covered with plastic film wrap in the reach-in refrigerator on the cook line. The gravy was placed in the walk-in refrigerator and the film wrap turned back to allow for air circulation. Thirty minutes later the gravy had cooled to 60°F. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food
