Inspector notes: Observed different types of animal protein being cooled in deep metal containers in prep fridge. Person in charge stated that animal proteins had been cooked 2 hours prior to inspection and were temping 55*-60*F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Explained to staff the prep coolers are not equipped to cool foods, all cooling shall be done in the walk in fridge
