Inspector notes: Observed the reach-in refrigerator with an ambient air temperature of 63F, min/max thermometer. According to PIC, the refrigerator stopped maintaining 41F or less the day prior to the inspection. The refrigerator in the break room and toddler's room is temporarily being used to store the yogurt, string cheese, milk, and sour cream. The refrigeration repair company visited the day prior to the inspection and has parts ordered for the repair, which may be up to two weeks. PIC has adjusted the menu as necessary and is preparing food that is shelf stable and/or held frozen. Equipment for cooling and cold holding TCS food must be sufficient in number and capacity to provide proper food temperatures (41F or below). Re-inspection 10 days

A thermometer must be used to ensure the proper temperature of foods being cooked from raw, cold holding, reheating, cooling etc. Re-inspection 10 days for the probe thermometer
