Inspector notes: Observed shredded cheese out on time control 52*f and cheese enchiladas 80*f degrees with no label. Kitchen chef stated items are rotated through within 2 hours, chef stated cheese left out of time control is refilled when it reaches the half way point to stay stocked. Cheese that was coming from adjacent fridge to fill cheese been was prepared day of and in an active cooling process at 50*f degrees. Per time control policy an item must be removed from refrigeration at 41*f degrees or lower and marked for 4 hours and then discard. Mixing batches is not allowed and item must display a time control sticker of start and discard. Items labeled at time of inspection
