Inspector notes: Observed walk-in cooler with an ambient temperature of 47-49*F. Unit thermometer was reading 52*F and compressor thermometer read blowing at 48*F. Lights were turned off and walk-in was locked for 20 minutes. Students were instructed to not open the walk-in in order to verify functionality. Ambient temperature did not recover to below 41*F. Signage was posted and verbal instructions were given to substitute teacher and staff to store all TCS foods in alternative units until repair is completed. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. **Re-inspection scheduled on 5/16/25** Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Please contact inspector with any updates or for any questions
