Inspector notes: Small reach-in cooler near beverage station found with ambient temperature of 50*F. The cooler had milk and other non-TCS food items such as cut lemons. The milk had recently been brought to the cooler from the walk-in and still had an internal temperature below 41*F. PIC moved the milk back to the walk-in for continued cold holding. The cooler will not be used for cold holding of TCS food items until it is repaired/replaced/adjusted to be able to maintain an ambient temperature of 41*F or below. Non-TCS items may continue to be stored in the cooler as-is or after repair. If cooler is opened so often that is unable to maintain an ambient temperature of 41*F or below, it may not be used for the storage of TCS food items. Time as a control may be used for TCS food items in the cooler as the cooler may keep the TCS food items chilled for quality/taste. Time as a control policy requires the items to be discarded after holding period ends
