Inspector notes: -- In main kitchen reach-in low profile refrigerator near ovens, observed multiple packages of salmon thawed inside of the reduced oxygen packaging (ROP). All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. Requested the person in charge (PIC) remove fish from ROP packaging at time of inspection

Inspector notes: Scoops stored in drawer cooler below grill with their handles in contact with the products they were stored in (tuna, coleslaw, macaroni salad). PIC removed the scoops from the drawer

Inspector notes: Employee knocked over an aerosol can, it fell on the ground, and the employee picked it up and placed it back on the counter. The employee then continued to handle food contact equipment and food items such as spatulas, hamburger buns, and lettuce. PIC had the employee stop, discard the food items, sanitize the equipment, and wash their hands. Discussed hand washing procedures

Inspector notes: Small reach-in cooler near beverage station found with ambient temperature of 50*F. The cooler had milk and other non-TCS food items such as cut lemons. The milk had recently been brought to the cooler from the walk-in and still had an internal temperature below 41*F. PIC moved the milk back to the walk-in for continued cold holding. The cooler will not be used for cold holding of TCS food items until it is repaired/replaced/adjusted to be able to maintain an ambient temperature of 41*F or below. Non-TCS items may continue to be stored in the cooler as-is or after repair. If cooler is opened so often that is unable to maintain an ambient temperature of 41*F or below, it may not be used for the storage of TCS food items. Time as a control may be used for TCS food items in the cooler as the cooler may keep the TCS food items chilled for quality/taste. Time as a control policy requires the items to be discarded after holding period ends
