According to PIC, the machine was recently serviced and the chemicals are a different concentration. PIC will have recently washed dishes rewashed, rinsed, and sanitized. The bottle of chlorine was replaced and ran until the chlorine concentration in the dish machine observed at 50-100 ppm

Inspector notes: Observed raw chicken breasts on sheet pans stored above open pans of prepped green beans and uncooked rice, on a speed rack in the walk-in cooler. PIC moved the raw chicken below the green beans and rice. Discussed the importance of separating raw and ready-to-eat (RTE) foods such as chicken and green beans. Separating different types of raw animal foods from one another and from foods not that do not require a cooking temperature, during storage, preparation, holding and display will prevent cross-contamination from one to the other. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination

Inspector notes: Observed the slicer used to cut tomatoes, lettuce, green peppers etc. with food debris on the blades. Also observed the punch/dicer with food debris on the blades and the rubber grid. According to employee, the equipment was used 1-2 days prior to inspection. PIC placed the equipment into the 3-compartment sink to be washed/rinsed/sanitized. Equipment food contact surfaces and utensils shall be clean to sight and touch. Discussed the hazards of TCS foods left on equipment that is stored at room temperature. Many foodborne illness pathogens grow rapidly in the danger zone (41-135F). TCS food debris remaining on clean equipment is a potential source of contamination for foods that come into contact with the equipment
