Inspector notes: In the tall reach in hot box, observed a pan of cooked chicken at 120-130*F. Chicken had been in the box for about 30 minutes. Chicken was reheated. In the hot holding prep line, observed grilled chicken at 115*F and fried chicken at 115*F. Per manager foods had been there for about 30-60 minutes. Foods were placed on time as control to preserve the quality of the food. Foods were time stamped and will be discarded after 4 hours
