According to person in charge, salsa was prepared the previous day. All TCS (time and temperature controlled for safety) foods must be cooled from 135*F-70*F within 2 hours, and from 70*F-41*F in the next 4 hours, for a total of 6 hours. Discussed cooling in shallow pans, using ice wands in large tubs, and taking temperatures throughout the cooling process to ensure time and temp parameters are met.
