Additionally, ham and cheese Danishes being stored on baking tray in front area measured 68 degrees F. Items were cooked nearly 2 hours prior and were moved to walk-in cooler at time. Please ensure food items are cooled in shallow, uncovered containers, inside closed cooling equipment to ensure cooling times are achieved (135 to 70 degrees F in 2 hours - 70 to 41 degrees F in 4 additional hours - 6 hours maximum)
