Inspector notes: Observed cooked fish filet and cooked spicy/crispy chicken filets hot holding in the make-line warmer with internal temperatures of 113-134F, probe thermometer, verified by PIC. According to PIC, the chicken and fish were cooked just prior to inspection and will be served within 30 minutes. The establishment's policy is to hot hold food at 140F or more. Discussed placing the filets towards the center of the trays and ensuring that the trays are completely inside of the warming unit. Maintaining cooked TCS foods at 135F or more during hot holding is required to prevent the growth of pathogens
