Inspector notes: Observed cooked whole potatoes in a deep container at a temperature of 90 F in reach in fridge located in an area behind the cash register at 10 am. Label on container displayed that potatoes were placed in fridge at 8:30 am this morning. PIC was informed that TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC added ice to the container to rapidly cool the potatoes. Observed a temperature of 65 F at 10:22 am
