Inspector notes: Observed refried beans stored in a hot box with an internal temperature range of 115F-133F near the flat top on the line. Per PIC and cook, the refried beans after being mashed by the stand mixer are transfer to pans and then placed in the hot box for hot holding until needed for service. The refried beans have been in the hot box for less than 2 hours prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
