Hot water was unable to be dispensed readily from the hand sink adjacent to the 3-comp sink. Discussed the importance of maintaining hand sinks in good repair to ensure water availability. Hot and cold water under pressure is required at all sink fixtures. A reinspection will occur on or prior to 12/4/25, to verify the correction

Inspector notes: Observed cooked chili hot holding in steam table on cook line range in temperature between 78*F and 88*F, via probe thermometer. Observed cooked meatball and sauce mixture in same steam table range in temperature between 94*F and 104*F. Steam table was operating appropriately, with water having a temperature of 170*F. Food was reheated to 165*F by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above

Inspector notes: Observed bag of raw chicken on top shelf in walk-in above ready-to-eat (RTE) cheese. Person-in-charge (PIC) moved bag of raw chicken to bottom shelf in walk-in. Observed raw in-shell eggs placed on top of a box of RTE pre-cooked meatballs with raw bacon and hamburger patties on shelf below. PIC moved raw in-shell eggs to bottom shelf in walk-in. All raw animal proteins must be stored below RTE foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code
