Inspector notes: Observed prep cooler with minimum ambient temperature of 52F. TCS foods stored inside the prep cooler had interal temperatures of 48F -51F. The person in charge temperature checks of the prep cooler were recorded around 8am and provided temperature check logs that showed internal temperatures of less than 40F for the TCS foods stored in the prep cooler. The person in charge removed all TCS foods from the prep cooler and placed a work order for service. Establishment has additional sufficient cold holding equipment to maintain cooling/cold holding capacities
