Inspector notes: Observed a few containers of beef soup that did not have date marks on them, and one with an old date mark. According to the person in charge, all of the soups had been cooked two days prior. The soup with the old date mark was an old sticker according to the person in charge. Discussed with person in charge to ensure that old date marking stickers are removed prior to adding on the next date mark so that they are properly tracked. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
