Inspector notes: Observed cooked potatoes 54*F by the cold table and cooked beef 88*F-97*F in a container on the flat top at the time of inspection. The person in charge stated they use TCS fries and beef heavily with orders and are typically used for a few hours. Advised the person in charge that time as temperature control should be used with this practice (to eliminate time items are in held in the temperature danger zone), and it will allow for 4 hours of usage, then discard of the items. The person in charge was advised that Time as a Public Health Control requires written procedures detailing the process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Fries has been cooked at 7am and advised PIC to discard fries by 11am. Carne asada was cooked one hour previously and instructed PIC to time stamp and discard after 4 total hours
