Inspector notes: Observed self service frozen raw shrimp in a glass top freezer approximately 15 fifteen across from the fish service counter. Attached to the side of the freezer was a metal scoop holder containing a metal scoop at room temperature. The scoop had visible shrimp pieces stuck to it. Upon removal of the scoop from the scoop holster there was debris, both liquid and solid state along with visible portions of thawed shrimp on the sides of the inside of the holster and bottom of the holster. The inside of the holster comes in direct contact with the food contact surfaces of the scoop. Per person in charge the scoop was probably placed out around 6am of the current inspection day. There was no record verbal or written from staff to determine if the scoop was exchanged or cleaned at a 4 hour frequency. Person in charge unsure when the scoop holster was last cleaned. All food contact utensils and equipment should be cleaned every four hours. Person in charge had scoop and holster cleaned at end of inspection
