Inspector notes: Observed aguachiles and ceviche made with shrimp marinated in lime juice (no heat cooking step) sold for retail sale in a display case near the bakery, missing the consumer advisory. Consumer advisory reminder statement is stated on the display case and the disclosure method (*) is placed on the name of each individual product. Informed PIC that the consumer advisory reminder statement needs to be added to the label for each item that contains the lime cooked fish and shrimp. Spoke to safety lead over the phone, working on updating the labels. Provide consumer advisory prior to reinspection on 04/24/2026. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement. Inspector notes: Observed shrimp aguachiles (cooked with lime) stored above ready-to-eat foods in the retail display case. Informed PIC that these products need to be stored below all ready-to-eat foods in the case. PIC properly stored the items at time of inspection. Observed raw bacon and raw beef and pork sausage stored above packaged cheese in the retail case. Observed raw bacon stored above cooked chicken wings, fully cooked chicken nuggets, and bags of shredded cheese. Informed PIC that raw animal proteins must be stored below all ready-to-eat foods. PIC properly stored the raw animal proteins and cheese at time of inspection. Provided separation and storage document via email. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code
