Inspector notes: Observed a large, heated container of corn champurrado with an internal temperature as measured using a probe thermometer of 105°F. According to the person in charge, the champurrado had been there for more than 2 hours and was embargoed at time of inspection (see embargo form). Upon closer observation, it was observed that the unit had become unplugged at some point and wasn't noticed. The unit was plugged back in. Observed roasted chicken wings and roasted jalapenos in a hot holding display case with internal temperatures as measured using a probe thermometer ranging from 105°F - 125°F. According to the person in charge, the chicken and jalapenos had been cooked and placed into the unit more than 2 hours from the temperature assessment. The chicken and jalapenos were embargoed at time of inspection (see embargo form). Other foods in the hot case had an internal temperature of at least 135°F or above. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above

Inspector notes: Observed a latch at the walk-in cooler door that is broken/missing a piece such that the door is not fully latching. Discussed with person in charge to repair the door latch so the walk-in cooler door can close completely and securely. Person in charge put in a work order to have the latch repaired. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection
