PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection

Discussed with PIC using only commercial insect electrocution devices in the establishment and that such devices should retain insects and be installed away from food prep areas. PIC removed device during time of inspection

Inspector notes: Observed plates and wares being stacked immediately after being taken out of the dishwashing machine, prior to being allowed to air-dry. Discussed with PIC that all equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. PIC took plates to be sanitized again and allowed to fully dry before stacking
