Inspector notes: Observed several dishes stored as clean at the clean dishes rack that upon separation, were observed to have visible food smears and residues on the inside of the nested pans. The dishes in questions were taken to the 3-compartment sink to be washed, rinsed and sanitized at time of inspection. Discussed with person in charge to soak dishes in hot soapy water for an extended period of time to help dislodge stuck on food residues. All food-contact surfaces must be cleaned to sight and touch
