All three items were observed in use at ambient temperature without time stamps indicating the times they were removed from temperature control. Per PIC, items were removed from temperature control at 6am, less than 4 hours prior to inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection. Inspector notes: Observed cooked onion and pepper at 82*F next to the grill on the cookline. Discussed with person in charge (PIC) except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Also observed used utensils sitting in water on the grill at 110*F. Per PIC the onion and pepper were placed there less than 30 minutes prior to inspection. Had PIC reheat to 165*F for the onion with pepper and the utensils between use. Discussed with PIC In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. Also, liquid real butter under the heat lamp was at 118*F. Discussed with PIC to place under Time as Public Health Control. (TPHC)
