Tub was overfilled to the point that the food was touching the bottom of the rack to the shelf above. All cooling containers should be shallow and the food should not exceed four inches in depth. Person in charge removed the pork and placed in two separate shallow containers for proper cooling

Provide a rigid drain line for the T&P relief drain as discussed. 7. Provide uni-struts for drain lines to ensure air gap is kept with floor sink (prep sink, ice machine, soda drains, warewash area drains). 8. Attach prep sink to the wall. 9. Seal the backsplash and sides of all sink fixtures. 10. Seal penetration inside the walk-in cooler (gasp as needed as well)
