PIC placed the containers at the 3-compartment sink to be rewashed and sanitized. Discussed the hazards of TCS foods left on equipment that is stored at room temperature. Many foodborne illness pathogens grow rapidly in the danger zone (41-135F). The timers were not activated when the pizzas were prepped and placed onto rack. The timers showed "000". According to person in charge (PIC), the pizzas were placed onto rack within the previous hour before inspection and will be held or discarded in 30 minutes max. PIC will bake pizzas or discard the uncooked pizzas within one hour of inspection. Discussed starting the timer when pizzas are put onto the rack to ensure that they are not held out of refrigeration for too long
