Inspector notes: Pepperoni and cheese pizzas on 3 speedracks near prep cooler found with internal temperatures of 54-70*F. The pizzas were using time as a control. No timers were set or logged upon inspector's arrival. One rack was full while the other two had about half a zone filled each. PIC stated the first pizza was placed into the first zone at 9:30 AM today and will discard the pizzas at 1:30 PM today if they are not used/sold by then. TCS food items using time as a control must be logged when they are placed out (digital timers, if timers are not functional, paper log may be used). ***2nd consecutive violation***

PIC stated all the pizzas were made today at some time after opening (10:30 AM). The pizzas will be marked for discard at 2:30 PM. Please set timers or use other means to log the exact time TCS food items are entered into using time as a control. TCS food items using time as a control must have their time tracked via timers once the first pizza enters a "zone" on the speed rack. The pizzas must be discarded or served within 4 hours per establishment's policy
