PIC was made aware of the situation and stated they need to remember to take off the date mark sticker before it gets sent to the three compartment sink. PIC relocated all food-contact surfaces to ware washing area to be washed, rinsed, and sanitized at the time of inspection

Inspector notes: Observed sanitizer levels in the mechanical dishwashing machine to be 10-25 ppm chlorine as measured on chlorine test strips. Machine was primed with sanitizer and multiple cycles were run; observed the sanitizer bucket to be running low. PIC instructed employees to wash, rinse and sanitize all dishes in the 3-compartment sink until dishwashing machine is serviced/sanitizer is replaced. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels, including increasing frequency at which sanitizer concentration is measured
