Inspector notes: 2ND CONSECUTIVE VIOLATION Observed the high-temp mechanical dish machine with a maximum temperature of 149.7, min/max thermometer, verified by PIC, while in use and after being ran several times. Temperatures were not documented on the log near the dish machine, for the day of the inspection. Employee provided a gallon of chlorine and switched the dish machine to chemical sanitizing (50-100 ppm chlorine). Discussed the importance of adequately sanitizing dishes. When food contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160ºF as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning

Inspector notes: -- Observed ambient air of high-temperature dishwasher reach a maximum surface temperature of 146°F using min/max thermometer. The PIC verified low temperatures with their dishwasher thermometer. After running several times, the temperature consistently measured less than the required temperature of 160°F. (final temperatures: 140°F, 146°F, and 141°F). At the time of inspection, the PIC stated they will switch the dish machine over to low-temp chlorine chemical sanitizing. All dishes will be sanitized in the 3-compartment sink until the dish machine is fully operational with a final rinse temperature of 160°F, or the equipment is altered to function as a low-temp chemical sanitizing (50ppm-100 ppm chlorine) machine
