Inspector notes: Cut cabbage mix-47-48F, cooked pasta-66F, and sausage items-88F cooling in the table top area of the make line unit; in a deep, covered container in the reach in cooler next to the make line; and at ambient temperature on a speed rack. PIC stated that all items had been recently made and/or prepped, and had been cooling for less than 2 hours. PIC relocated all items to the walk in cooler to rapidly cool.
