Inspector notes: Observed several containers of tightly lidded beef soup inside of plastic containers inside of a reach-in refrigerator. According to the person in charge, the soup had just been cooked and placed into the fridge. The internal temperature of the soups was above 135°F as measured using a probe thermometer. Discussed with person in charge to cool foods in wide, flat shallow pans less than 4 inches deep, uncovered and to utilize ice baths to rapidly chill food down to 41°F. The person in charge prepared ice baths and placed the cups of soup into the ice baths to rapidly chill down to 41°F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means
