Per person in charge (PIC) the chicken was reheated in the microwave and placed in the hot holding equipment approximately 20 minutes prior to inspection. Discussed with PIC TCS food items prepared onsite and reheated for hot holding must be rapidly reheated to 165°F within 2 hours prior to hot holding. PIC reheated grilled chicken above 165*F and placed in the hold holding equipment at the time of inspection

Inspector notes: Observed several single use large soy sauce containers holding dry rice, teriyaki sauce, orange sauce. Per PIC the sauces arrive from the other store location in the large soy sauce containers that are washed and reused at that location. An empty soy sauce container stored upright by the ice machine is used as the ice bucket. A stack of used and rewashed soy sauce containers are stored in the hallway on the ground by the back door for pick up by the other store location. Per PIC the containers will be picked up and taken to the other store where they will get washed, reused and be used for the next batch of sauces to be brought back to this location. Discussed with PIC these single use containers are not designed to be washed and reused for sauces, dry foods or even as an ice bucket. Also discussed ice buckets shall be stored upside down between uses. Discussed to replace the single use containers with food safe reusable containers
