Inspector notes: Observed white rice in cooker being reheated at 100-110*F As per the staff there was cooked rice available in the morning and staff used rice that had cooled from the day before. Rice was placed in the rice cooker around 11:00 am when business opened. Staff reheated rice in microwave to 165*F before returning to warmer. Rice may be reheated to 165*F and held hot at 135*F. More rice was cooked for the afternoon. Advised staff to check rice temperature from walk in cooler to ensure rice cooled to 41*F prior to reheating. Best practice would be not to re-use/re-heat rice
