PIC stated owner instructs employees to rotate and discard every 3 hours. Discussed keeping all time-controlled items on a 4 hour time stamp for discard

Alerted staff who stated they had not properly rotated the drink to be used within 7 days (see embargo). All RTE/TCS foods prepared within the past 7 days were discarded by the PIC at the time of inspection. RTE/TCS foods requiring date marking must be date-marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
