Inspector notes: Observed an open container of cream cheese with an open date of 10/10, which is more than 7 days prior to inspection on 10/23, and open packages/containers of American cheese and hummus, without date marks, in the 2-door refrigerator. According to PIC, the hummus and American cheese were opened during the current week and will be labeled with the correct open date. PIC discarded the cream cheese, see embargo form. Discussed creating a policy for date marking and disposition that is consistently used by staff. The Food Code requires that TCS foods be discarded 7 days after opening/prep when held at 41F or less. Day 1 begins the date that a package of TCS food is opened, such as deli meats, or once cooked/prepped, such as noodles or proteins. Adding 6 to the start date (6+1) determines the discard date

Inspector notes: Observed a produce box of whole cantaloupes stored on the floor, under the handwashing sink. The waste line of the hand washing sink observed to be leaking directly onto the rind of the cantaloupes and water on the floor observed under and surrounding the produce box. PIC discarded the cantaloupes, see embargo form. The cantaloupes were contaminated from the waste water of the hand sink and from the floor (produce box is not entirely enclosed on all sides). Discussed storing food at least 6 inches off of the floor and protecting from any overhead contamination. All food must be in good condition, safe, and unadulterated. All adulterated food was discarded at time of inspection
