PIC voluntarily discarded the fried chicken, see embargo form. Discussed the procedure for hot holding and monitoring temperatures of TCS foods. PIC will retrain employees. Maintaining cooked TCS foods at 135F or more during hot holding is required to prevent the growth of pathogens
